Subway Reveals New Recipe To Bake Its Iconic Double Chocolate Cookies At Home

For food lovers, undoubtedly the best thing to come out of lockdown is our favourite eateries sharing how to make their most iconic dishes at home.

We've had Pizza Express share how to make its classic Margarita, IKEA give the lowdown on its Swedish meatballs and Wagamama reveal all about how to whip up its go-to Katsu Curry.

And now Subway are also doing the nation a kindness by sharing recipes, from its iconic submarine sandwiches to its delicious sides.

This week, the chain - which have followed many in closing their stores amid lockdown measures - are revealing the recipe for their iconic double chocolate chip cookies.

The deliciously chewy chocolate cookies, which are packed with both milk and white chocolate chunks, are our go-to snack when the sandwich artist asks us if we want to upgrade to a meal. Simply too good to miss!

To make 16 cookies, all you'll need is 10 ingredients and 35 minutes (including bake time). Not bad, eh?

Ingredients

125g salted butter, softened
100g light brown sugar
75g granulated sugar
1 tsp vanilla extract
1 medium egg
150g plain flour,
sifted 40g cocoa powder,
sifted 1⁄2 tsp baking soda
100g white chocolate, roughly chopped
200g milk chocolate, roughly chopped

Method

  1. Preheat the oven to 175°C.
  2. Line two large baking trays with baking parchment.
  3. In a large bowl, combine the butter and sugars. Using a wooden spoon, cream the mixture until light and fluffy, for about three minutes.
  4. Lightly beat the egg and vanilla together, and add to the butter mixture a little at a time, beating until well combined.
  5. Using a wooden spoon or spatula, fold through the flour, cocoa powder, and baking soda until just combined. Finally, add the white and milk chocolate chips, mixing until evenly distributed. Be careful not to overwork the mixture.
  6. Using an ice cream scoop or spoon, divide the mixture into 16 golf ball-size portions. Roll into a ball and place onto the lined baking trays, spaced at least 5cm apart. Depending on the size of the trays, this may need to be done in batches.
  7. Bake for 12 minutes until well spread and just set on the surface. The cookies will still be quite soft, but will firm up as they cool.
  8. Leave on the tray for 5 minutes, then carefully transfer to a cooling rack to cool completely. Store cookies in an airtight container for up to 7 days.

Aside from its cookies, Subway has also released recipes for its Herbs and Cheese Bread and the Chicken Teriyaki Sub (which you can find on Subway's Facebook), and are planning to release recipes for its Meatball Marinara Sub and Chipotle Southwest Sauce over the next few days.

Subway closed some 2,300 stores on March 23rd when Prime Minister Boris Johnson announced lockdown. Fans can still get sandwiches delivered in limited locations via JustEat and UberEats.
