People Are Making Mini Blueberry And Choc Chip Muffin Cereal

Lockdown has seen a trend for all manner of foods take on new life in our cereal bowls.

We've seen pancake cereal, glazed doughnut cereal and even mini pizza cereal (for the savoury types) all shrunk down and served with milk. However, the latest creation looks to be the most delicious yet.

Instagram foodie Valentina Mussi (aka @sweetportfolio) never shies away from experimenting with a new take on a sweet treat, and her latest creation sees blueberry and chocolate chip muffins reimagined as the breakfast food.

The mini muffin cereals are simple to make, and only require 2 cups of flour, 3 tsps baking powder, 1 cup of sugar, 1/4 cup of oil, 1/4 tsp salt, an egg, 1 cup of milk and blueberries or mini chocolate chips depending on which one you're making.

To make, you simply mix your ingredients together to form your muffin batter and use a piping bag to squeeze the mixture into tiny penny-sized portions on a baking tray.

Valentina uses a special cereal baking tray with tiny holes for her, but it you don't have one of those just use a flat baking tray and make your portions half the size (pea-sized) as they'll melt flat when baking.


For the blueberry muffin version, simply pop a blueberry (fresh or frozen) into the top of each batter portion. Valentina says you can chop your blueberries in half if they're a little too big!

For the chocolate chip muffin versions, simply scatter a few mini choc chips on top.

Next, simply bake at 200C for 8 minutes to make your tiny muffins.
