Like the rest of the world, we've got seriously into lockdown baking.

But what do you do if your ingredients are in short supply, and you need to knock something sweet and delicious together to curb your cravings, ASAP?!

Introducing Lotus Biscoff truffles: the tasty caramel-flavoured treat we will be living off for the forseeable future.

There are a few variations of the Biscoff truffle knocking about online, but our favourite comes in cheesecake form, and needs just four ingredients.

Yup, all you'll need is some Biscoff biscuits, Biscoff spread and cream cheese, along with some coconut for dusting.


Posted on TikTok by Sydney-based foodie Walla Abu-Eid, 30, the tasty treat takes just minutes to prepare - and the results look absolutely mouthwatering.

And when she shared the creation on her Instagram, it was a roaring success too, with hundreds flocking to 'like' the recipe, and one even branding it "genius".

"I have recently been obsessed with Lotus Biscoff so wanted to use it to make a bite-sized dessert that was available to munch on whenever I had a sweet craving," she told Tyla.

"Truffles sounded like a great idea! I crushed a bit of the biscuits, added some spread and cream cheese and the perfect Biscoff cheesecake truffles were born.

"After posting these on Instagram they were recreated hundreds of times.

"They have the perfect balance of sweetness, crunch and nuttiness - simply Biscoff heaven."

Here's Walla's recipe if you want to try it for yourself.

Ingredients:

  • 2 packs Biscoff lotus biscuits (32 pcs all up)
  • 3 tbsp Biscoff spread
  • 3 tbsp cream cheese (any type!)
  • Coconut for coating

Method:

  1. Crush biscuits and add cream cheese and Biscoff spread
  2. Roll into balls and coat in coconut!

Mmmm.

She's not the only person getting on the hype. In fact, over 100 Biscoff truffle creations come up when you search the hashtag on Instagram.


At the moment, the truffles are mostly being sold in independent dessert and biscuit shops.

But we have a feeling it won't be long before these are a staple in pretty much everyone's kitchens!

Biscoff truffles are just one of the incredible sweet treats people have been knocking up with the Speculoos spread and biscuits they've got at home.

People are so obsessed with the stuff we've seen Biscoff lattes, Biscoff cookies even whipped Biscoff - an tastier take on the Dalgona coffee trend.

Similar to the above, most of these lockdown friendly recipes are minimal effort, minimal ingredients and maximum calories - just how we like them!
